The artichokes are transformed using wine vinegar, as has always been done in the typical preserves of Salento. They are then placed under the excellent “L’Agrumato” lemon extra virgin olive oil, obtained with a particular method in the company oil mill with the first lemons, to which are added the local aromatic herbs. The artichoke cream can be used to prepare delicate canapes in appetizers or to accompany grilled meat or fish dishes.
Ingredients: artichoke, potatoes, lemon citrus oil, wine vinegar, salt, aromatic herbs, parsley, garlic, mustard.
